1 Butternut squash -- peeled,
- seeded, cubed
3 Apples -- cored, peeled, sliced
1 tb Lemon juice
3/4 ts Ground cinnamon
1 tb Brown sugar
1/2 c Apple juice
Preheat oven to 350 F.
Combine squash and apples with lemon juice and cinnamon. Place
squash-apple mixture in a 1 qt casserole dish and sprinkle with brown
sugar. Pour apple juice over mixture, and cover casserole. Bake for
1 hour, or until squash is fork tender.
