MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Fold-Over Tortilla Bake

     Yield: 6 servings

     1 lb Ground beef
     1 c  Onion; chopped
    29 oz Stewed tomatoes (2 cans)
     1 c  Enchilada sauce
     2 ts Ground cumin
   1/2 ts Salt
   1/4 ts Pepper
    12    Flour or corn tortillas
          - tortillas
     6 oz Cream cheese; softened
     4 oz Can chopped green chilies;
          - drained
     1 c  Monterey Jack cheese;
          - shredded
          Fresh cilantro; minced (optional)

 In a large skillet, cook ground beef and onion until
 beef is no longer pink, breaking into crumbles; drain.
 Stir in the tomatoes, enchilada sauce and seasonings.
 Bring to a boil. Reduce heat and simmer, covered, for 5
 minutes. Pour half the meat sauce into a 13x9" baking
 dish. Set aside.

 Wrap stacked tortillas in foil; heat at 350 F for 8-10
 minutes. Spread each warm tortilla with cream cheese and
 top with chiles; fold in half. Arrange folded tortillas
 over meat sauce; pour remaining sauce over top.

 Cover and bake @ 350 F/175 C for 15 minutes. Sprinkle
 with cheese; bake until cheese is melted, about 5
 minutes longer. If desired, top with cilantro.
