MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Cajun Beef Casserole

     Yield: 6 Servings

 8 1/2 oz Box cornbread/muffin mix
     1 lb Ground beef
    20 oz Diced tomatoes (2 cans);
          - drained
     2 c  Mixed vegetables; thawed
     6 oz Can tomato paste
     2 ts Tony Chachere's seasoning
     1 c  Cheddar cheese; shredded
     2    Green onions; thin sliced

 Set oven @ 350 F/175 C.

 Prepare cornbread batter according to package

 directions. Spread into a greased 11x7" baking dish.

 In a large skillet, cook and crumble beef over medium heat until no
 longer pink; drain. Add tomatoes, vegetables, tomato paste, and
 seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for
 5 minutes. Pour over batter. Sprinkle with cheese.

 Bake, uncovered, until golden brown, 25 to 30 minutes. Sprinkle
 with onions.
