6 sl Bacon
1 tb Butter
1 Onion; chopped
1/2 Green pepper; chopped
6 Zucchini; up to 7
1 ts Salt
1 cn Tomato sauce
1/2 c Water
Buttered bread crumbs
1 c Cheese; grated
Fry bacon until crisp, cool & break into bits. Set aside.
Saute onion and green pepper in butter.
Peel & cut zucchini into chunks or slices. Add to onion & pepper
mixture in frying pan.
Add salt, tomato sauce, & water. Simmer until nearly tender. Place in
casserole dish.
Top with buttered bread crumbs, cheese, & bacon bits. Bake in 350 F
oven for 30 minutes.
