     Title: Walking Taco Casserole

     Yield: 8 Servings

     1 ts Oil
     1 lb Ground beef
     1 sm Onion; chopped
     1 oz Env taco seasoning
   110 oz Ro*Tel diced tomatoes &
          - green chilies; undrained
15 1/2 oz Can pinto beans; rinsed,
          - drained
15 1/4 oz Can whole kernel corn;
          - drained
 9 1/4 oz Bag corn chips
     2 c  Shredded Mexican cheese
          - blend

MMMMM--------------------------TOPPINGS-------------------------------
          Green onion; sliced
          Black olives; sliced
          Pico de gallo
          Sour cream
          Avocado; chopped
          Guacamole
          Jalapenos; sliced

 Set oven @ 350 F/175 C.

 In a large skillet, heat oil over medium heat. Add ground beef and
 onion; cook until beef is browned and onions are tender, 6 to
 7 minutes. Stir in seasoning mix and diced tomatoes with green
 chiles. Bring to a simmer, cook until thickened, 2 to 3 minutes,
 stirring constantly. Stir in beans and corn.

 Layer corn chips in greased 13x9" baking dish. Spoon taco meat
 evenly on top. Sprinkle with shredded cheese. Bake until cheese is
 bubbly, 15 to 20 minutes. Serve with toppings, as desired.
