4 Tomatoes; peeled & sliced
4 Zucchini; sliced
2/3 c Long grain rice; uncooked
1 1/2 lb Lean ground beef
1/4 c Green pepper; chopped
1 c Tomato juice
1 c Cheese; shredded
2 ts Salt
1/2 ts Oregano
Pepper; to taste
Oil 9x13" baking dish. Arrange half the tomatoes on the bottom of
dish. Arrange half zucchini over tomatoes. Sprinkle with 1/2 ts salt.
In a bowl, combine beef, rice, green pepper, onion, parsley, oregano,
1 ts salt, & tomato juice. Spoon on top of zucchini. Sprinkle top
with 1/t ts salt. Cover & bake @ 375 F until tender. Sprinkle with
cheese & bake uncovered 15 minutes more.
