MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Artichoke Egg Casserole

     Yield: 9 Servings

   1/2 c  Green onions; chopped
     1 tb Oil
     3 cl Garlic; minced
     8 lg Eggs; lightly beaten
 4 1/2 oz Sliced mushrooms; drained
   26 oz  Marinated artichoke hearts
          - (4 jars)
     3 c  Sharp Cheddar cheese;
          - shredded
     1 c  Ritz cracker (25); crushed

 Drain artichokes, reserving 1/2 cup marinade. Set aside. Cut
 artichokes into slices; set aside. In a small skillet, saute green
 onions in oil until tender. Add garlic; cook 1 minute longer.
 Remove from the heat.

 In a large bowl, combine the eggs, artichokes, mushrooms, cheese,
 cracker crumbs, onion mixture, and reserved marinade.

 Transfer to a greased 13x9" baking dish. Bake, uncovered @
 350 F/175 C for 35 to 40 minutes or until a knife inserted in the
 center comes out clean. Let stand for 5 minutes before cutting.
