MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Loaded Red Potato Casserole

     Yield: 8 Servings

    16 sm Red potatoes
   1/2 c  Milk
   1/4 c  Butter; in cubes
   1/2 ts Pepper
   1/8 ts Salt
 1 1/2 c  Cheddar cheese; shredded,
          - divided
   1/2 c  Bacon; cooked, crumbled
     1 c  Sour cream
     2 tb Fresh chives; minced

 Set oven @ 350 F/175 C.

 Place potatoes in a 6 qt stockpot; add water to cover. Bring to a
 boil. Reduce heat; cook, uncovered, until tender, 15 to 20 minutes.
 Drain; return to pot.

 Mash potatoes, gradually adding milk, butter, pepper, and salt.
 Spread into a greased 3 qt baking dish and sprinkle with 1 cup
 cheese and bacon. Dollop with sour cream; sprinkle with chives and
 remaining cheese.

 Bake, uncovered, until heated through and cheese is melted, 20 to
 25 minutes.
