     Title: Roast Beef With Chive Roasted Potatoes

     Yield: 6 Servings

     2 lb Red potatoes; in 1" cubes
     2 tb Olive oil
     2 ts Chives; minced
   3/4 ts Salt; divided
     2 md Onions; halved, thin sliced
     1 lb Fresh mushrooms; sliced
   1/4 c  Butter; in cubes
     1 cl Garlic; minced
     1 ts Dried rosemary; crushed
   1/4 ts Pepper
   1/3 c  Dry red wine or beef broth
     2 c  Cooked roast beef; in cubes
     1 c  Beef gravy

 Place potatoes in a greased 15x10x1" baking pan. Drizzle with oil;
 sprinkle with chives and 1/4 ts salt. Toss to coat. Bake,
 uncovered, at 425 F until tender, 25 to 30 minutes, stirring
 occasionally.

 Meanwhile, in a large skillet, saute onions and mushrooms in butter
 until tender. Add the garlic, rosemary, pepper and remaining 1/2 ts
 salt; cook 1 minute longer. Stir in wine. Add beef and gravy; heat
 through. Serve with potatoes.
