MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Twice-Baked Potato Casserole
Categories: Potatoes, Bacon, Chilies, Cheese
     Yield: 8 Servings

     6 md Idaho potatoes; baked
          - (leftovers are fine)
   1/4 ts Salt
   1/4 ts Pepper
     1 ts Good-quality paprika
     1 lb Sliced bacon; cooked and
          - crumbled or diced
     3 c  Sour cream (24 oz)
     2 c  Mozzarella cheese;
          coarsely shredded
     2 c  Cheddar cheese;
          - coarsely shredded
     2    Green onions; finely chopped

 (Spread bacon Out on baking Sheet covered with aluminum Foil and
 broil, for a quick And easy approach)

 Cut potatoes into 1" cubes. Place half in a buttered 13x9x2" baking
 dish  Sprinkle with half of the salt, pepper, paprika, and bacon.
 Top with half of the sour cream and cheeses.

 Repeat layers. Bake, uncovered, at 350 F for 20 minutes or until
 cheese is melted. Sprinkle with finely chopped green onions, if
 desired.

 Variation: Finely chop 1 medium onion. Place chopped onion in a
 microwave-safe bowl, add 2 ts butter, cover tightly with plastic
 wrap and microwave on high power for 5 minutes. Add to layers as
 you assemble the casserole prior to baking.
