MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Cheesy Summer Squash Casserole

     Yield: 2 servings

     2 sm Yellow summer squash;
          - sliced
   1/4 c  Onion; chopped
   1/2 ts Salt; divided
     1 lg Egg
   1/4 c  Mayonnaise
     2 ts Sugar
          Pepper
   1/4 c  Cheddar cheese; shredded
     2 tb Cornflakes; crushed
 1 1/2 ts Butter; melted

 In a small saucepan, combine squash, onion, and 1/4 ts salt. Cover
 with water. Bring to a boil. Reduce heat; simmer, uncovered, until
 squash is crisp-tender, about 2 minutes. Drain.

 In a small bowl, whisk the egg, mayonnaise, sugar, pepper, and
 remaining salt until blended. Stir in cheese and squash mixture.
 Transfer to a greased 2-cup baking dish. In a small bowl, toss the
 cornflakes and butter; sprinkle over top.

 Bake, uncovered @ 350 F/175 C until golden brown and bubbly, 25 to
 30 minutes.
