MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Kugel Casserole

     Yield: 8 servings

     3 md Carrots; grated
     2 md Yukon Gold potatoes;
          - shredded
     1 lg Leek
     1 md Zucchini; grated
     1 md Parsnip, grated
     4 tb Olive oil
     4 lg Eggs; beaten
     2 ts Lemon zest
     1 tb Fresh basil; chopped
     1 tb Fresh rosemary; chopped
   1/2 c  Matzo meal

 Coat an 8x11" casserole dish with cooking spray and transfer to a cold
 oven with a rack in middle position. Heat oven to 350 F/175 C.

 In a large bowl, add all ingredients. Gently toss to combine. Season
 with salt and pepper, if desired.

 Remove pan when oven temperature reaches 350 F/175 C. Add vegetable
 mixture and smooth evenly. Bake until golden brown and center is set,
 about 45 minutes. Let cool 20 minutes before serving warm.
