MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Enchilada Casser-Ole!

     Yield: 8 servings

     1 lb 90% lean ground beef
     1 lg Onion; chopped
     2 c  Salsa
    15 oz Can black beans; rinsed,
          - drained
   1/4 c  Italian salad dressing
     2 tb Taco seasoning
   1/4 ts Ground cumin
     6    Flour tortillas (8")
   3/4 c  Sour cream
     1 c  Shredded Mexican cheese
          - blend
     1 c  Lettuce; shredded
     1 md Tomato; chopped
   1/4 c  Fresh cilantro; minced

 In a large skillet, cook beef and onion over medium heat until meat
 is no longer pink, breaking it into crumbles; drain. Stir in the
 salsa, beans, dressing, taco seasoning and cumin. Place 3 tortillas
 in an 11x7" baking dish coated with cooking spray. Layer with half
 of the meat mixture, sour cream and cheese. Repeat layers.

 Cover and bake @ 400 F/205 C for 25 minutes. Uncover; bake until
 heated through, 5-10 minutes longer. Let stand for 5 minutes; top
 with lettuce, tomato and cilantro.
