2 Chicken breasts
2 cl Garlic -- minced
1 Lemon -- juice of
Parsley flakes -- to taste
Pepper -- to taste
2 c Rigatoni
1 c Sour cream
3/4 c Mayonnaise
1 Can cream of mushroom soup
1 Can fried onions -- I use Durkee
1 Can green beans
1 Can whole mushrooms -- quartered
1 c Monterey jack cheese -- grated
2 ts Thyme
Pepper -- to taste
Marinate chicken breasts in lemon juice, garlic, parsley, and pepper
for about 20 minutes; cut into cubes and saute quickly; set aside.
Meanwhile boil the rigatoni until tender; drain.
In a large casserole dish combine soup, sour cream, mayonnasie,
thyme, and pepper; stir until smooth.
Add cooked chicken, mushrooms, green beans, and about 1/4 of the
fried onions; mix well.
Add cooked pasta, stir well.
Sprinkle top with cheese and remaining onions and bake uncovered at
350 F for about 30 minutes or until bubbling.
Notes:
This recipe is pretty flexible, you could use fusilli or penne
instead of rigatoni, substitute cream of chicken, or onion or
broccoli for the mushroom soup. Switch the green beans to peas, or
steamed broccoli, or zucchini (maybe) - I don't recommend corn in
this one. As for the cheese, I think cheddar, swiss, colby, or
parmesan would all work well too!
