MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Amish Breakfast Casserole
Categories: Pork, Vegetables, Potatoes, Cheese
     Yield: 12 servings

     1 lb Sliced bacon; diced
     1 md Sweet onion; chopped
     6 lg Eggs; lightly beaten
     4 c  Shredded hash brown
          - potatoes; thawed
     2 c  Cheddar cheese; shredded
 1 1/2 c  Cottage cheese
 1 1/4 c  Ementhal cheese; shredded

 Set oven @ 350 F/175 C.

 In a large skillet, cook bacon and onion over medium heat until
 bacon is crisp; drain. In a large bowl, combine remaining
 ingredients; stir in bacon mixture.  Transfer to a greased 13x9"
 baking dish.

 Bake, uncovered, until a knife inserted in the center comes out
 clean, 35-40 minutes. Let stand 10 minutes before cutting.
