2 lb Mild bulk pork sausage
2 ts Ground cumin
1 ts Garlic powder
4 md Onions -- chopped
4 md Green peppers -- chopped
4 Beef bouillon cubes
4 c Water -- boiling
3 Jalapeno peppers -- seeded and minced
12 1/2 oz Converted long grain and wild rice mix
- (2 pkg)
Pour hot water into Crock-Pot which has been set to High. Stir in
bouillon cubes. Brown sausage, garlic powder, and cumin in skillet.
Drain. Add onions and green peppers, saute until tender (15 to 20
minutes). Transfer to Crock-Pot. Stir in jalapeno peppers and rice.
Cover and cook on High for 1 hour, then turn to Low and cook 1 to 2
more hours. Serve.
Serves 10 to 12.
Note: If a spicier rice casserole is desired add seasoning mix that
is included with rice.
