6 Flour tortillas
16 oz Chopped green chiles (2 cans) --
- drained
8 oz Smoked turkey -- thinly sliced
4 c Monterey Jack cheese -- shredded
1 c Frozen corn -- thawed
5 Eggs
2 c Milk
1 ds Tabasco sauce
1/2 tb Garlic powder
Freshly ground pepper --
- to taste
1/2 c Fresh cilantro -- chopped
Line a greased 9x13" baking pan with the tortillas.
Layer the chiles, turkey, cheese, and corn 1/2 at a time in the
prepared pan.
Beat the eggs, milk, Tabasco sauce, garlic powder, and pepper in a
bowl. Pour over the layers.
Top with the cilantro. Chill, Covered, overnight.
Bake at 350 F for 50 to 60 minutes. Cool and cut into squares to
serve.
Note:
This is a great "do ahead" entree if you're planning for company. I
often offer it as a daily special and our customers love it served
with our Caesar Salad. (see recipe)
