3 lb Chicken; cut-up
1/3 c Flour
2 ts Salt
1/3 c Oil
1/2 c Onion; diced
1/2 c Celery; diced
1/2 c Green bell pepper; diced
1 c Catsup
1 c Coca-Cola Classic
2 tb Worcestershire sauce
1 tb Salt
1/2 ts Hickory smoked salt
1/2 ts Basil leaves
1/2 ts Chili powder
1/8 ts Pepper
Rinse the chicken and pat dry. In a bowl, mix the flour and 2 ts of
salt. Coat the pieces with the flour mixture. In a skillet, heat
the oil. Brown the chicken all sides. Remove the browned chicken
and place in a 3 qt casserole. Discard the drippings.
In a bowl, combine the remaining ingredients, mixing well. Spoon
sauce over the chicken, making sure that all pieces are covered.
Cover casserole.
Bake in a preheated, 350 F oven for about 1-1/4 hours, or until
chicken is fork-tender. If desired, serve the chicken with the
sauce over hot rice.
Makes 4 to 6 servings with about 3 cups of sauce.
