1 lb Ground beef
4 sl Mozzarella cheese
4 Burger buns
Basil Mayonnaise:
2 c Mayonnaise
1 c Fresh basil leaves
Salt and pepper
Tomato Salsa:
2 Tomatoes; chopped
1 md Onion; chopped
1/2 c Pimento olives; chopped
2 cl Garlic; minced
1 tb Red wine vinegar
3 tb Olive oil
Salt and pepper
Basil Mayonnaise:
Place all ingredients in a blender. Puree until smooth.
Salsa:
Combine all ingredients in a bowl. Let stand for 30 minutes.
Form 1 pound ground beef into 4 patties. Place on heated grill
pan. Cook for 5 minutes. Turn and cook for 3 more minutes. Place 1
slice cheese on each burger. Continue to cook for 2 more minutes
or until cheese melts. Serve with Basil Mayonnaise and Tomato Salsa.
