     Title: Keto Waffles

     Yield: 6 Servings

   1/2 c  Coconut milk
   1/4 c  Coconut oil; melted
     4 lg Eggs
     1 ts Vanilla extract
 1 1/2 c  Almond flour
     2 tb Granulated monk fruit or
          - stevia sugar substitute
     1 ts Baking powder
   1/4 ts Salt

 In a large bowl, whisk together coconut milk, coconut oil, eggs,
 and vanilla extract. Whisk in almond flour, sugar substitute,
 baking powder, and salt.

 Preheat a waffle iron; grease with cooking spray. Pour 1/2 cupfuls
 of batter into waffle iron; cook according to manufacturer's
 directions. Repeat with remaining batter.
