1 pound Cacique brand chorizo (beef or pork)
4 Russet potatoes -- diced
3 Green bell peppers -- diced
6 Roma tomatoes -- diced
Boil diced potatoes in salted water for about 8 minutes. Drain and
cool. Cook the chorizo and drain off excess fat. Add the potatoes,
bell peppers and tomatoes. Serve with scrambled eggs.
