     Title: Sunrise Squares
Categories: Casserole, Easy, Eggs
     Yield: 6 Servings

1 lb Original style pork sausage
2 sl Bread, cubed 1/2 inch
          -(about 2 cups)
   3/4 c  Bell pepper, diced
          -(combination green/red)
     1 c  Sharp cheddar cheese
          -(shredded)
     6 lg Eggs
     2 c  Milk
   1/2 ts Salt (optional)
   1/2 ts Dry mustard

 Preheat oven to 350 F.

Crumble sausage and cook in medium fry pan over med heat until
sausage is browned.  Drain off any drippings.

Grease a 11x7 baking dish.  Spread bread cubes in pan.  Top with
sausage, bell peppers and shredded cheese.

Whisk eggs, milk, salt and mustard until well blended then pour
 mixture over cheese.

Bake 30 to 40 minutes OR until set.  Test by inserting knife blade in
middle of pan until knife blade comes out clean. (Mine took 40
 minutes)

Let stand 5 minutes before cutting into squares.

Makes six servings if serving a salad along with it.  Probably 4
 servings if eating by itself.

PERSONAL NOTE: good flavor.  Could experiment with other ingredients:
Cubed Ham; cooked leftover potato; mexican cheese. Just about any
combination one would use for an omlet.
