MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Stuffed Hash Browns

     Yield: 4 Servings

    20 oz Bag refrigerated shredded
          - hash brown potatoes
   1/4 c  Onion; fine chopped
   1/2 ts Salt
   1/4 ts Pepper
     4 tb Olive oil; divided
   1/2 c  Pepper jack cheese
   1/2 c  Bacon; cooked, crumbled
   1/2 c  Sour cream
     2    Green onions; thin sliced

 In a large bowl, toss potatoes with onion, salt, and pepper. In a
 small cast-iron or other heavy skillet, heat 2 ts oil over medium
 heat. Add 1 cup potato mixture, pressing down to flatten with
 spatula. Cook, without stirring, until bottom is golden brown, 4 to
 5 minutes. Drizzle with 1 ts oil; flip. Cook until bottom is golden
 brown, 4 to 5 minutes, sprinkling with 2 tb cheese and 2 tb bacon
 during the last minute of cooking.

 Fold hash browns in half; slide onto plate and keep warm. Repeat
 with remaining ingredients. Top with sour cream and green onions.
