                    Short Order Buttermilk PancaksS

  1                    Egg
  2       c            All purpose flour
  2       c            Buttermilk
    3/4   ts           Baking soda
  1 1/2   ts           Baking powder
    1/2   ts           Salt
  1       tb           Sugar
  3       tb           Butter -- melted

 Beat eggs; Add buttermilk. Sift flour, soda, baking powder, salt,
 and sugar blending well; add to egg mix; add melted butter; mix
 well. Drop by spoonfuls onto lightly greased griddle and brown on
 both sides, cooking until done. (Griddle should be medium high
 heat).

 Hint: To make buttermilk: Add 1 tb lemon juice per cup of milk.

 One serving equals three 4" pancakes.

 Yield: 6 Servings
