MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Best Buttermilk Pancakes
Categories: Pancakes
     Yield: 9 Pancakes

     1    Egg
     1 tb Sugar
     1 c  Flour
     1 ts Baking powder
     1 c  Buttermilk
   1/2 ts Soda
     2 tb Vegetable oil
   1/2 ts Salt

 Beat the egg in a medium bowl until fluffy; add buttermilk and oil.
 Sift dry ingredients together into liquid mixture and stir just until
 smooth. For thinner pancakes, stir in an additional 1/4 cup milk.
 Grease heated griddle if necessary. (To test griddle, sprinkle on a
 few drops of water. If bubbles skitter around, heat is just right.)

 Pour about 3 tb of batter onto hot griddle. Cook pancakes until
 puffed and bubbly on top and dry around the edges. Turn and cook the
 other sides until golden brown.
