     Title: Southwest Tortilla Scramble
Categories: Greens, Cheese, Salsa
     Yield: 2 servings

     4 lg Egg whites
     2 lg Eggs
   1/4 ts Pepper
     2    Corn tortillas (6"); halved,
          - cut in strips
   1/4 c  Fresh spinach; chopped
     2 tb Cheddar cheese; shredded
   1/4 c  Salsa

 In a large bowl, whisk egg whites, eggs, and pepper. Stir in
 tortillas, spinach and cheese.

 Heat a large skillet coated with cooking spray over medium heat.
 Pour in egg mixture; cook and stir until eggs are thickened and no
 liquid egg remains. Top with salsa.
