     Title: Potato Egg Tacos
Categories: Mexican
     Yield: 8 Servings

     8    Taco shells
     5    Eggs
     2 md Potatoes; diced
     2    Onions; chopped
     1 c  Sharp cheddar cheese; grated
     2    Green peppers; chopped
   1/2 c  Walnuts; chopped (optional)
     1 ds Cumin
     1 ds Black pepper
     1 ds Curry powder
     1 ds Garlic

MMMMM--------------------------TOPPING-------------------------------
          Nuts
          Lettuce; chopped
          Onions; chopped
          Tomato slices
          Green pepper; chopped
          Cheese; and lots of it

 Saute onions, peppers, and potatoes in oil until tender. Add beaten
 eggs, cheese, optional walnuts, and spices and simmer until eggs are
 cooked and cheese is melted. Spoon filling into shells and add
 topping.
