4 c Zucchini; up to 5 c,
- shredded, packed
1 c Sharp cheddar cheese; grated
4 Eggs; well beaten
1/4 c Biscuit mix
1/4 ts Garlic powder
1 1/4 ts Salt
1/4 ts Pepper
1/4 c Parsley; chopped
Sprinkle Zucchini with salt & set aside for 1 hour. Place in colander
& press out liquid. Thoroughly blend zucchini, cheese, pepper, garlic,
parsley, biscuit mix, & eggs. In 10" glass dish, melt 1 tb butter for
30 seconds. Add zucchini mixture & cook uncovered for 10 minutes,
stirring halfway through cooking. Rest for 5 minutes. Top with chives.
