                             Texas Zucchini

  4                    Eggs -- beaten slightly
    1/2  c             Oil
  1      c             Biscuit mix
  3      c             Zucchini -- thinly sliced
    1/2  ts            Salt
    1/2  ts            Seasoning salt
    1/4  c             Onion -- chopped
  2      tb            Parsley -- chopped
    1/4  c             Cheddar cheese -- grated

Mix thoroughly and pour into greased 9x11" baking dish. Bake
25 minutes or until bubbly and brown in a 350 degree F oven. Serve in
squares while warm.

Serves 6 to 8 people.

Notes: I have used dried parsley instead of fresh. Also never used
the seasoning salt, just regular salt. And of course being a kid at
the time, I increased the 1/4 cup cheese to 1 cup cheese. If you have
non-squash lovers in the house, I always grated the zucchinni instead
of slicing, then it wasn't noticeable to them.

To freeze: Cool, and cut into squares. Flash frreeze, then transfer
to bags. Thaw, then reheat in microwave at medium setting.
