     Title: Scalloped Tomatoes

     Yield: 4 Servings

     1 c  Chopped celery
   1/2 c  Chopped onion
     1 cl Garlic, minced
     2 tb Butter
     2 tb All-purpose flour
     3    Slices toast, cubed
     1 cn 14 ounce stewed tomatoes
     1 tb Granulated sugar
   1/4 c  Chopped fresh basil
     1 ts Salt
     2 ts Dijon mustard
          Freshly ground black pepper
     2 tb Fresh grated Parmesan cheese

 Preheat oven to 350 F.  In a fry pan, saute celery,
 onion and garlic in butter until tender.  Blend in
 flour.  Add remaining ingredients, except Parmesan and
 half of the toast cubes.  Place mixture in 1 quart
 casserole. Sprinkle remaining toast cubes and Parmesan
 cheese over the top.  Bake for 25 minutes until
 topping brown and mixture is bubbling.  Serves 4
