MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Sweet Potato Fritters

     Yield: 6 Servings

     6 c  Water; boiling
     3 c  Sweet potatoes;
          - peeled, shredded,
          - slightly packed
     2 lg Eggs
   1/4 c  A-P flour
     1 ts Baking powder
     1 ts Corn starch
     1 ts Seasoned salt
     2 ts Harissa; up to 3 ts
     1 sm Onion; grated
   1/4 c  Coconut oil
   1/2 c  Queso fresco; crumbled

          Avocado; sliced
          Tomato; sliced
          Fresh cilantro; minced

 Pour boiling water over sweet potatoes in a large bowl;
 let stand 20 minutes. Drain, squeezing to remove excess
 liquid. Pat dry.

 In a large bowl, whisk the eggs, flour, baking powder,
 corn starch, seasoned salt, and harissa. Add the sweet
 potatoes and onion; toss to coat.

 In a large nonstick skillet, heat 2 tb coconut oil over
 medium heat. Working in batches, drop sweet potato
 mixture by 1/4 cupfuls into oil; press slightly to
 flatten. Fry for 1 to 2 minutes on each side until
 golden brown, using remaining oil as needed. Drain
 on paper towels. Serve with queso fresco and desired
 optional ingredients.
