Title: Sweet Potato, Sausage, And Green Pepper Hash

2 sm Sweet potatoes; peeled,
- halved longways,
- in 1/2" slices
12 oz Bulk pork sausage
1 Anaheim pepper, seeded,
- chopped
4 c Spinach and/or baby kale
1/2 ts Ground cumin
1/2 md Orange
1 tb Olive oil
4 lg Eggs
1/8 ts Salt
1/8 ts Crushed red pepper
In a large skillet, bring 2 tb water to boiling over medium heat.
Add sweet potatoes, cover, and cook for 12 minutes.
Uncover the skillet, add sausage and chile pepper. Cook over medium
high heat until sausage is brown and sweet potatoes are tender,
stirring occasionally to break up sausage. Stir in spinach and
cumin; squeeze orange half over spinach and cook and stir 1 to
2 minutes or until wilted. Transfer mixture to a serving dish.
Cover to keep warm.
Add oil to the skillet; heat over medium heat. Crack eggs into
skillet; sprinkle with salt and crushed red pepper and cover. Cook
for 2 to 3 minutes unmtil done to your likeness. Serve over hash.
