     Title: Squash Au Gratin

     Yield: 9 Servings

 5 1/2 c  Butternut squash; peeled,
          - thin sliced
   1/2 ts Salt
   1/4 ts Pepper
   1/8 ts Ground nutmeg
     2 tb Olive oil; divided
     1 c  Heavy whipping cream
     2 md Tart apples; peeled,
          - thin sliced
     4 oz Gorgonzola cheese; crumbled

 In a large bowl, combine the squash, salt, pepper, nutmeg, and 1 tb
 oil; toss to coat. Transfer to a greased 11x7" baking dish; pour
 cream over top.

 Cover and bake @ 325 F/165 C for 30 minutes. In a small bowl, toss
 apples in remaining oil. Spoon over squash. Bake, uncovered, for 25
 to 30 minutes or until squash is tender. Sprinkle with cheese; bake
 3 to 5 minutes longer or until cheese is melted.
