     Title: Chilean Squash

     Yield: 4 Servings

     4 c  Squash or pumpkin; cooked;
          -mashed or pureed
     1 c  Onion; chopped
 1 1/2 c  Mixed red and green peppers;
          -chopped
     2 cl Garlic; crushed; up to 3
     1 ts Ground cumin
     4    Eggs; beaten
     2 c  Corn; (fresh or frozen)
   1/2 ts Chili powder
     1 c  Cheddar; grated
   1/2 ts Ground coriander
     1 ds Cayenne; (more to taste)
     1 ds Black pepper
     1 ts Salt
     2 tb Olive oil

 Preparation time: 1 1/2 hours

 Saute onions, garlic, and spices in olive oil until onions and
 garlic are translucent. Add peppers and salt. Cover and cook 5 to 8
 minutes.

 Add saute to mashed squash, along with corn and beaten eggs. Mix
 well. Taste to correct seasonings.

 Spread into a buttered 2 qt casserole dish, and top with cheese.

 Bake in 350 F oven for 20 minutes covered or 15 minutes uncovered.
