                        Scalloped Summer Squash

 Amount  Measure       Ingredient -- Preparation Method

  2      pounds        summer squash -- boiled
  3      tablespoons   butter or margarine
  3      tablespoons   yellow onion -- grated
    3/4  teaspoon      salt
    1/8  teaspoon      pepper
                       *TOPPING*
    1/2  cup           cracker crumbs
  1      tablespoon    butter or margarine -- melted

Preheat oven to 350 .  Drain squash well and mash with a potato masher.
Mix in all remaining ingredients except topping.  Spoon into a buttered
shallow 1 - 1/2 quart casserole and top with buttered crumbs.  Bake,
uncoverd, 25 - 30 minutes until lightly browned.  Source:  New New
