                         Cheesed Summer Squash

  2      lbs           summer-squash, medium size
    1/4  cup           milk
  1 1/2  teaspoons     salt
    1/8  teaspoon      garlic powder
    3/4  cup           fine dry bread crumbs
    1/4  cup           vegetable oil
  1      cup           stewed tomatoes -- thickened
  1 1/2  cups          American Cheddar cheese -- grated

Peel squash if skin seems tough, then slice 1/8 inch thick. Dip into
milk, a slice at a time. Dust with salt, pepper and garlic powder.
Cover with crumbs. Let stand 10 minutes to set coating. Saute in oil
until lightly browned on both sides. Rub shallow 3 pint baking dish
with oil. Arrange squash in it, slices barely overlapping. Spoon over
tomatoes. Cover with cheese. Bake in moderate (375 ) oven, or until
squash is fork tender.
