MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Roasted Herbed Squash W/Goat Cheese

     Yield: 10 servings

     2 md (1-1/2 lb ea) acorn squash;
          - peeled, in 2" cubes
 5 1/2 lb Butternut squash; peeled, in
          - 2" cubes
     3 tb Olive oil
     2 tb Minced fresh thyme
     2 tb Minced fresh rosemary
     1 tb Kosher salt
     1 ts Coarse ground pepper
    11 oz Log fresh goat cheese;
          - crumbled
     2 tb Coarse chopped fresh
          - parsley
     1 tb Syrup; warmed slightly

 Set oven @ 425 F/218 C.

 Toss squashes with oil and seasonings. Transfer to 2
 foil-lined 15x10x1-in. baking pans.

 Roast squash, stirring once, until soft and some pieces
 are caramelized, 30-35 minutes. Switch position of pans
 midway through roasting to ensure even doneness. If a
 darker color is desired, broil 3" - 4". from heat 2-4
 minutes.

 Cool slightly. To serve, add goat cheese to squash;
 gently toss. Sprinkle with parsley; drizzle with syrup.
