MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Sunchoke Kale Farro Hash
Categories: Vegetables
     Yield: 10 Servings

   3/4 c  Farro
 2 1/2 lb Sunchokes
     1 lb Kale
     6 tb Oil
     1 sm Red onion; diced
     2 tb Butter
   1/2 lb Oyster mushrooms
          Salt
          Pepper

 Cook farro until tender.

 Cover sunchokes with water and a pinch of salt. Boil until tender,
 about 10 minutes. Slice 1/4 inch thick.

 Boil kale until tender, about 3 minutes. Chop coarsely.

 In small skillet, heat 2 tb oil. Add red onion and salt. Cook over
 medium-low heat, stirring occassionally, until browned, about
      12    minutes.

 In big skillet, add 2 tb butter and sunchokes. Cook over high heat
 until browned on bottom, about 3 minutes. Flip sunchokes. Reduce to
 medium-high heat. Cook until brown, about 2 minutes. Push to side of
 skillet.

 Add 1 tb oil and oyster mushrooms. Add salt and pepper to taste. Cook
 over medium-high heat until browned, about 3 minutes. Ad 1 tb oil and
 all other ingredients.
