Stewed Celery With Herbs

3 c Celery -- coarsely chopped
1/4 c Fresh parsley -- finely chopped
3 tb Butter
2 tb Flour
1 c Milk
3 oz Cream cheese -- cut in pieces
1 ts Basil -- * see note
1 ts Chives
1/4 ts Salt
In a medium sized skillet, heat celery, parsley, and 1" water to
boiling over high heat.
Reduce heat to low, cover and cook celery until tender, about 10
minutes. Uncover and continue to cook, stirring constantly until all
liquid evaporates, about 15 to 20 minutes. Transfer to a medium bowl.
In the same skillet, melt butter over medium heat. Stir in flour
until smooth.
Gradually stir in milk and cook stirring constantly until sauce
thickens.
Stir in cream cheese, basil, chives and salt. Cook until cheese melts.
Return celery to sauce; heat mixture just to boiling and serve
immediately.
Notes:
If using fresh herbs which is preferable, then use 1 tb for each
1 ts required of the dry.
