                         Stir-Fried Vegetables

  4      oz            Green beans -- cut into 2"
                       - pieces
  4      sm            Carrots -- peeled, cut into
                       - matchstick-size strips
  1                    Red bell pepper -- cut into
                       - matchstick-size strips

Heat oil in large skillet over medium-high heat.  Add vegetables and
saute until crisp-tender, about 8 minutes.  Season to taste with salt
and pepper.
