1/3 c Olive oil
1 md Onion -- chopped very fine
1 cl Garlic -- chopped very fine
1 1/2 lb Eggplant -- peeled & cubed
2 md Zucchini -- sliced-peel on
3 Green peppers -- cut in strips
Salt and pepper
Basil
6 Ripe tomatoes -- peeled & seeded
Saute the onion and the garlic until soft. Add eggplant and zucchini,
toss well. Then add the pepper strips, salt and pepper to taste, and
the basil. Simmer covered until the vegetables are soft. Add tomatoes
and allow them to cook down with the vegetables until the mixture is
thick and well blended. Serve hot or chilled, with additional olive
oil and lemon juice.
