                  Moroccan Eggplant and Garbanzo Beans

  1                    Eggplant -- cubed, 1"
  1                    Onion -- sliced
  1      cl            Garlic -- chopped
    1/8  ts            Crushed red pepper
  1      c             Water
  1      ts            Curry powder
  1      tb            Lemon juice
  2      ts            Honey
  3      tb            Ketchup
  2      c             Garbanzo beans -- cooked,
                       - drained
    1/2  c             Raisins
                       Garnish:
  1      c             Tomatoes -- chopped
  1                    Orange -- wedged
    1/2  c             Skim yogurt

Cook cubed eggplant in microwave for 5 minutes (tender but not mushy.)

Combine onion, garlic, red pepper flakes, and 2 tb water in saucepan.
Cover and simmer over low heat for 10 minutes. Add curry powder and
cook briefly. Add lemon juice, honey, ketcup, and remaining water and
bring to a boil.

Stir in garbanzos, eggplant, and raisins and simmer uncovered for
5 minutes.

Garnish with tomatoes, orange and yogurt.
