                           Italian Vegetables

    3/4  c             Rice
    1/4  ts            Salt
  2      c             Water
  6      tb            Oil
  2      tb            White wine vinegar
  2      tb            Soy sauce
    1/4  ts            Pepper
    1/4  ts            Turmeric
    1/4  lb            Spinach
    1/2  c             Green onion -- sliced
  4      sl            Crisp bacon -- crumbled

Simmer rice, covered, in salted water until rice is done. Drain.
Combine oil, vinegar, soy, pepper, turmeric. Stir into the still warm
rice. Tear the spinach into small pieces. Toss spinach, onion, and
bacon into the rice.

Eat it as a cold salad, or warm as a side dish.
