                          Zesty Vegetable Tray

  3      md            Yellow squash -- sliced
  3                    Egg -- hard-boiled, sliced
  1      md            Cucumber -- sliced
  3      md            Tomatoes -- sliced
                       Salt -- to taste
                       Freshly ground pepper --
                       - to taste
  1      cl            Garlic -- up to 2, minced
                       Parsley -- chopped
    1/3  c             Vinegar
    2/3  c             Peanut oil
                       Parsley

Arrange vegetables in alternate rows on a tray; season with salt and
pepper. Sprinkle with garlic and parsley. Combine vinegar and oil in
a jar; tighten lid securely, and shake well. Pour over vegetables.
Garnish with parsley.
