6 oz Smoked bacon; cubed small
1 c Onion; minced
2 lb Collard greens; washed

2 Garlic; minced
1 Tomato; diced
1 pn Thyme
1 ts Pepper (this is a bit much
-for normal people)
1 Hot red pepper pod

1 tb Vinegar pepper sauce (I used
-Popie's)
1 tb Sugar
2 oz White wine
Ham scraps (optional)
Water or broth
Salt
Saute bacon and onion together.
Slice collard stems thin and add to pot. Stir over high heat until
wilted. Add garlic, tomato, thyme, pepper, pepper pod, vinegar,
sugar, and wine. Cook over high heat for awhile. Chop and add the
collard leaves. Reduce heat to low and add ham scraps and water to
cover. Cook for an arbitrarily long time. Taste for seasoning. Add
salt to taste.
Drain off the liquid and serve it ("pot liquor") as soup, with a
side of cornbread. Use the greens as a vegetable.
