2 bn Salsify or oyster plant
2 tb Butter or other fat; melted
2 tb Flour
1 c Milk
1/2 ts Salt
Pepper
1 tb Parsley; chopped
Wash the salsify, scrape, cut into small pieces, and drop into cold
water to prevent it from turning dark. Boil in an uncovered pan in a
small quantity of unsalted water for 30 minutes, or until tender, and
drain. Prepare a sauce of the fat, flour, milk, salt, and pepper,
pour this over the cooked salsify, reheat, and serve with the chopped
parsley sprinkled over the top.
