2 lb Yukon Gold or russet
- potatoes; peeled, cubed 2"
1 Chipotle chile in adobo;
- up to 2, finely minced
1/2 c Plain, unsweetened nondairy
- milk; heated
1 tb Olive oil
Salt
Place the potatoes in a large saucepan with cold salted water to
cover. Bring to a boil over medium-high heat and cook the potatoes
until tender, about 20 minutes.
Drain the potatoes, return them to the saucepan, and mash with a
potato masher. Mix in the chipotle(s), nondairy milk, olive oil, and
salt to taste. Continue to mash until all of the ingredients are well
mixed and the potatoes are smooth. Serve hot.
