MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Purple Mashed Potatoes
Categories: Five, Potatoes, Dairy, Herbs
     Yield: 10 Servings

     3 lb Medium purple potatoes;
          - peeled
     2 ts Salt; divided
     1 c  Whole milk; warmed
     1 c  Butter
   1/2 ts Pepper
     2 tb Fresh parsley; minced

 Place potatoes in a stock pot; add water to cover. Season water
 with 1 ts salt; bring to a boil. Reduce heat; cook, uncovered,
 until tender, 15 to 20 minutes. Drain and return to pan.

 In a small saucepan, heat milk and butter until just warm and
 butter is melted; set aside.

 Gently mash potatoes while gradually adding milk and butter mixture
 to reach desired consistency. Stir in remaining 1 ts salt and
 pepper; garnish with parsley.
