Title: Microwave Mashed Potatoes

Yield: 5 servings
6 md Potatoes; peeled, diced
1/2 c Milk or Half & Half;
- up to 3/4 c
1/4 c Butter; to taste
Salt & pepper
Rinse peeled and diced potatoes.
Arrange potatoes in medium glass bowl.
Cover with plastic wrap and pierce the wrap in the center to allow
steam to escape.
Cook at HIGH for 9 to 10-1/2 minutes; stir once. You can set your
kitchen timer for a reminder to stir. Potatoes should be tender.
Let stand, covered, for 5 minutes.
During this 5 minute standing time, combine milk, butter, salt and
pepper in a large glass bowl or 8 cup glass Pyrex measuring cup.
Cook milk mixture at MEDIUM for 2 to 3 minutes or until hot.
Drain potatoes.
Add potatoes to the hot milk mixture; mash until smooth.
UDD NOTES: Any potatoes work but Yukon Golds work best. I use a potato
ricer I inherited from my Grandmother. Once you've "riced" your
potatoes you will push your masher far to the back of your kitchen
tools drawer.
For a taste treat add cloves of peeled garlic to the potatoes while
cooking. Or add garlic granules/powder to the milk mixture.
