1 1/2 c Mashed potatoes; firmly packed
1 Egg yolk
1 ts Butter
Salt & pepper
Aerosol non-stick
-cooking spray
Preheat sandwich maker. Combine all ingredients except non-stick
spray. Spray each scallop with the non-stick spray. Distribute the
potato mixture evenly into the four scallop moulds. Lower lid and
cook for 5-7 minutes. Serve with grilled steak and a French salad.
Makes 4 patties
Variations: Add any of the following to the potato mixture:
* 1 tb Prepared mustard
* 1 tb Prepared mustard and 1/2 c Cheese; grated
* 1 tb Parsley; chopped
* 2 rashers bacon; sauteed and chopped
* 1 tb Chives; chopped and 1 tb Sour cream
* 1 sm Onion; chopped, fried in 1 tb Butter & 1 ts Curry powder
until tender.
